Most people don't know what a zucchini really is other than it looks like a cucumber. Zucchini is a very under appreciated vegetable to say the least. This mild flavored summer squash tastes somewhat nutty and fresh when eaten on salads, and basically picks up the flavors of the foods it is cooked with. Zucchini has a very wide range of use in the culinary world.

Zucchini can be shredded using a food processor and then added to baked goods such as breads and cookies. You can also add to the nutritional value of hamburger and meatloafs by adding in some shredded zucchini. It is a great addition to stir-frys and salads. It is outstanding when chunked and grilled with other veggies. With so many uses it is a shame that zucchini isn't a more common staple around the kitchen. In terms of nutritional value, zucchinis are pretty heathy. They have a high amount of manganese, which is vital for bone health, and play a roll in our nervous system. Zucchini is also high in vitamin C, which helps your immune system, and magnesium which improves your heart heath and is also important for bone growth.

Zucchini amoung the other summer squashes is also high in antioxidants. Antioxidants are very important to our health as they help fight premature aging, and also have been found to be cancer fighting and preventative. It is very important to eat a variety of foods high in antioxidants.

If you want to try out zucchini a simple way to start is steaming it and adding a bit of butter afterwords. This is a great way to begin to learn about the flavor of the vegetable before committing to using it in a recipe.
